Okay, it's my first shared recipe! I've got loads of delicious dishes but I'm a very disobedient cook and I never follow rules exactly so it's really difficult for me to share them. It's a bunch of this, a little of that and you know, you throw it in that thing and turn on some heat until the dish looks ready. More of an art with me, less of a science. So.... I'll do my best to guide y'all through this. ALL of my "measurements" are just approximations. I also have to say, for the most part, I do extremely fast and healthy meals so a lot of times I'll cheat with a little home prepped and a little store bought. This meal, in particular, I get a lot of help from the grocery store fairies.
Cauliflower Rice and Friend
4 cups of cauliflower rice*
1 packet of Palak Paneer**
1 tbl of Extra Virgin Olive Oil
some black pepper
tsp minced garlic
Heat the oil and garlic on the stove top in a large frying pan. Add cauliflower rice, cook for about 5 to 10 minutes (more or less depending on how al dente you like it). Then heat the Palak Paneer (or any other delicious Indian topping you want) according to the directions on the package. Combine "rice" and topping and enjoy!
* To make just food process a head of cauliflower or if you're in a hurry buy it chopped up!
** You can find all kinds of delicious, protein packed, vegetarian and vegan Indian packets in the Indian food aisle. Palak Paneer from this brand is a favorite of mine.
